The international standard ISO 22000:2018 "Food safety management systems (FSMS) - Requirements for any organisation in the food chain" is a standard harmonised with quality management, environmental management and certification standards that sets uniform requirements for HACCP systems.
This international standard is aimed at establishing safety management systems and is intended to be used by all organisations involved in the chain of production, supply and sale of food products. According to this standard, the food chain is a sequence of stages and operations that include the manufacture, processing, distribution, storage and processing of food and food products, from primary production to consumption. The production chain is seen as a single process during which all factors that may lead to the manufacture of substandard and hazardous products should be eliminated.
In accordance with the Law of Ukraine "On Basic Principles and Requirements for Food Safety and Quality", all persons engaged in the production or introduction of food products must apply HACCP systems without exception (Article 81 of the Law).
Compliance with the HACCP concept is mandatory for all companies that produce, process or sell food.
HACCP is an acronym for Hazard Analysis and Critical Control Points.
FSSC 22000 (Food Safety System Certification) is an extension of ISO 22000 that includes additional requirements and programme prerequisites for specific industries of food market operators.
In the ISO 22000 standard prerequisites are not explicitly expressed, but only general statements.
The FSSC 22000 food safety management system is based on both ISO 22000 and PAS 220 (the ude is not currently in force!), and the prerequisites are developed in more detail (e.g., the likelihood of food contamination in the production environment by biological, chemical and physical contamination (contamination) of products, including cross-contamination; annual hazards in products and in the processing of products; pest control; personnel hygiene, etc.)
ISO 22000 is not a GFSI recognised standard
FSSC 22000 is recognised by GFSI, which opens the door to cooperation with global retailers.
* The Global Food Safety Initiative (GFSI) is a non-profit international organisation established in 2000 to improve food safety in different countries.
ISO 22000 is suitable for businesses of all sizes that want to ensure a basic level of food safety, while FSSC 22000 is suitable for large manufacturers or exporters who need to meet international market requirements and cooperate with retailers.
